Sarson Ka Saag
Traditional winter mustard greens slow-cooked with spinach, bathua, ginger, garlic, and coarse cornmeal (makki ka atta), finished with a sizzling desi ghee tadka.
Ingredients
For Cooking the Greens
- 500 g mustard greens (sarson)โ washed in 4 changes of water, thick stems peeled
- 250 g spinach (palak)โ balances mustard bitterness
- 150 g chenopodium (bathua) or methiโ adds earthiness
- 2 tbsp gingerโ chopped
- 8 cloves garlicโ peeled
- 4 whole green chilliesโ chopped
- 1 1/2 cups waterโ for simmering
- 2 1/2 tbsp makki ka atta (maize flour)โ dissolved in 3 tbsp warm water (alhan)
- 1 tsp saltโ to taste

- 3 tbsp desi gheeโ rich
- 1 large onionsโ finely chopped

Wash & Simmer the Greens
