Ingredients
For the Ilish (Hilsa)
- 500 g Ilish (Hilsa) fish steaksโ washed gently and patted dry
- 1 tsp turmeric powderโ for seasoning
- 1 tsp saltโ rubbed into fish
For the Pungent Mustard Paste
- 2 tbsp yellow mustard seeds (shorshe)โ provides mellow sweet tang
- 1 tbsp black mustard seeds (rai)โ provides sharp pungent kick
- 6 whole green chilliesโ 2 ground with mustard, 4 slit for finishing
- 1/2 tsp saltโ ground with mustard to prevent bitterness
