Classic Bengali Mishti Doi
Rich, creamy, caramelized sweetened yogurt fermented in unglazed earthen clay pots that absorb excess moisture for a thick, velvety custard texture.
Ingredients
For the Sweet Caramelized Milk
- 1000 ml full cream whole milkโ rich cow or buffalo milk
- 150 g sugarโ divided into two batches
- 0.3 tsp green cardamom powderโ freshly crushed
- 2 tbsp waterโ for melting caramel
For the Culture Starter
- 3 tbsp thick hung curd / Greek yogurtโ strained of whey, whisked smooth
Cooking Instructions

Reduce Milk by 30%
โฑ๏ธ 15mBring whole milk to a boil in a heavy pot with 75g sugar and cardamom powder. Simmer on medium-low for 15 minutes, stirring frequently and scraping cream off sides until reduced to approximately 700ml.
โ Visual Cue: Milk turns thick, creamy, and slightly ivory in color - 02
Caramelize Sugar for Golden Color
โฑ๏ธ 6mIn a dry pan on low heat, add remaining 75g sugar and 2 tbsp water without stirring. Let sugar dissolve and bubble into a deep amber-golden caramel. Immediately pour 1/2 cup of warm milk into the caramel while stirring vigorously to combine.
โ Visual Cue: Rich bubbling amber caramel dissolves into golden syrup - 03
Mix Caramel into Reduced Milk & Cool
โฑ๏ธ 10mPour the caramel syrup into the reduced hot milk. Stir well until uniform toffee color. Let cool down to lukewarm temperature (around 40-42ยฐC / 105ยฐF, comfortable when dipping your pinky finger).
โ Visual Cue: Milk is warm (not hot!) with an enticing butterscotch hue - 04
Whisk in Culture & Pour in Clay Pots
โฑ๏ธ 4mWhisk smooth hung curd in a small bowl, add 2 tablespoons of warm milk to temper, then whisk back into the lukewarm milk. Pour into unglazed terracotta clay pots (matka).
โ Visual Cue: Foamy bubbles settle in the earthen pots - 05
Ferment & Chill
โฑ๏ธ 480mCover pots with aluminum foil. Place in a warm spot (like an unheated oven with light on) for 6-8 hours until set firmly. Chill in refrigerator for 3 hours before serving.
โ Visual Cue: Thick, spoonable, wobble-free sweet yogurt
Chef's Authentic Tips
- Fermenting in unglazed earthenware (matka) is the secret: porous clay absorbs excess whey, yielding dense, custard-like texture.
- Make sure the milk is only lukewarm when adding the yogurt culture; hot milk will kill the lactobacillus bacteria.
Smart Substitutions
- Can use palm jaggery (nolen gur) in winter instead of caramelized sugar for authentic Nolen Gurer Mishti Doi.
Serving Suggestions & Pairings
- โ Serve chilled straight out of the clay pot after a rich Bengali lunch.
