Cooking Instructions

  1. 01

    Marinate & Shallow Fry Fish

    โฑ๏ธ 8m

Rub fish steaks with turmeric and salt. Heat mustard oil in a kadai to smoking point. Fry fish pieces for 2-3 minutes per side until lightly golden (do not over-fry, or fresh carp turns tough). Remove and set aside.

โœ“ Visual Cue: Fish turns light golden with delicate crisp crust
  2. 02

    Fry Potatoes & Vegetables

    โฑ๏ธ 5m

In the same mustard oil, fry potato wedges and cauliflower florets with a pinch of turmeric and salt for 4-5 minutes until golden on edges. Drain and remove.

โœ“ Visual Cue: Potato wedges develop a golden skin
  3. 03

    Temper Kalonji & Sautรฉ Spices

    โฑ๏ธ 4m

In remaining oil, add kalonji (nigella seeds) and 2 slit green chillies. Add ginger paste, cumin powder, coriander powder, Kashmiri chilli, and 2 tbsp water to prevent scorching. Cook on medium-low for 3 minutes until oil separates.

โœ“ Visual Cue: Aromatic nigella seeds crackle in mustard oil
  4. 04

    Simmer the Light Broth (Jhol)

    โฑ๏ธ 8m

Add 2.5 cups warm water, salt, and the fried potatoes. Bring to a rolling boil. Reduce heat, cover, and cook for 8 minutes until potatoes are completely tender.

โœ“ Visual Cue: Potatoes become soft and broth turns golden yellow
  5. 05

    Slide in Fish & Rest

    โฑ๏ธ 5m

Gently slide the fried fish steaks into the bubbling jhol along with remaining slit green chillies. Simmer for 4-5 minutes so fish absorbs the light spiced broth. Garnish with fresh coriander and rest covered 5 minutes.

โœ“ Visual Cue: Light golden aromatic curry with tender, flaky fish

Chef's Authentic Tips

  • Frying fish in smoking hot mustard oil prevents it from sticking and eliminates raw freshwater fish odors.
  • Authentic Macher Jhol is a light soupy broth (jhol), not a thick heavy gravy.
๐Ÿ”„

Smart Substitutions

  • Can use salmon, sea bass, tilapia, or cod steaks if Rohu or Katla is unavailable.
