Amritsari Chole Bhature
The quintessential Punjabi weekend feast: gigantic, golden, balloon-puffed fried bread (bhature) paired with rich, tangy, dark spiced chickpeas.
Ingredients
For the Balloon-Puffed Bhature Dough
- 350 g all-purpose flour (maida)โ sifted

- 2 tbsp gheeโ for finishing tadka

Knead & Ferment Bhatura Dough
โฑ๏ธ 15mIn a large bowl, mix maida, sooji, baking powder, baking soda, sugar, and salt. Add yogurt and 2 tbsp oil. Knead into a soft, smooth dough using warm water. Slap dough onto counter 10 times to develop gluten. Coat with oil, cover with damp cloth, rest in a warm place for 2 hours.

Roll into Oval Bhature
โฑ๏ธ 8mGrease rolling surface with oil (do not dust dry flour, as dry flour burns in frying oil). Roll a golf-ball sized portion of dough into a thick oval sheet (about 7 inches long).

Flip & Drain
