Cooking Instructions
- 01
Crush Rice & Coat in Ghee
โฑ๏ธ 3mDrain soaked basmati rice. Lightly crush grains with fingers to break into smaller bits (this releases rice starch directly into milk for creaminess). Toss with 1 tsp ghee.
โ Visual Cue: Broken fragrant rice grains coated in glossy ghee - 02
Boil Milk in Heavy Pot
โฑ๏ธ 8mRinse a heavy pot with cold water (prevents milk scorching). Add whole milk and bring to a boil over medium flame.
โ Visual Cue: Milk comes to a rolling boil with frothy cream on top - 03
Slow Simmer Rice in Milk
โฑ๏ธ 30mAdd the crushed rice. Reduce flame to low. Simmer for 25-30 minutes, stirring every few minutes and scraping the creamy malai off the pot sides back into the milk.
โ Visual Cue: Rice turns velvety soft and milk thickens to creamy consistency - 04
Add Saffron, Sugar & Cardamom
โฑ๏ธ 6mOnce rice is meltingly soft and milk has reduced by 35%, stir in sugar, saffron-infused milk, and cardamom powder. Simmer for 5-6 minutes until sugar dissolves completely.
โ Visual Cue: Kheer turns a pale golden saffron hue with sweet cardamom perfume - 05
Garnish with Nuts & Cool
โฑ๏ธ 3mStir in slivered almonds, pistachios, raisins, and rose water. Turn off heat. Serve warm or chill in refrigerator for 3 hours.
โ Visual Cue: Rich, creamy pudding topped with glowing green pistachios and golden saffron
Chef's Authentic Tips
- Coarsely crushing the soaked rice grains before simmering allows rice starch to bind with milk fat for a naturally creamy consistency.
- Always add sugar only AFTER the rice is completely cooked; adding sugar too early prevents rice from softening.
Smart Substitutions
- Can use jaggery (gud) instead of sugar; add jaggery only after kheer cools slightly to prevent milk curdling.
Serving Suggestions & Pairings
- โ Serve warm in winter, or chilled in summer garnished with edible silver vark and rose petals.
