Chef's Authentic Tips
- Raw papaya paste is indispensable for Kacchi Mutton Biryani; without it, mutton will remain tough during dum cooking.
- Use a mix of chops, ribs, and marrow bones for ultimate richness.
Smart Substitutions
- Can use lamb if goat meat is unavailable, reducing marination by 1 hour.
Serving Suggestions & Pairings
- โ Serve hot with Mirchi Ka Salan, boiled eggs, and burani raita (garlic yogurt).
