    In a heavy-bottomed biryani handi, mix chicken with yogurt, ginger-garlic paste, 2/3 of crushed fried onions (birista), half of chopped mint and coriander, slit green chillies, shahi jeera, whole and ground spices, lemon juice, onion-frying oil, and salt. Marinate for at least 2 hours.

    Cook Rice to 70% Parboiled

    Bring 3 liters of water to a rolling boil with whole spices and 2 tbsp salt. Add drained soaked basmati rice. Cook on high heat for exactly 5-6 minutes until 70% cooked (rice grain has elongated, but has a firm bite and breaks into 3 pieces when pressed).

    Using a slotted skimmer, scoop the 70% parboiled hot rice directly over the raw marinated chicken layer in the handi. Spread evenly. Scatter remaining birista, mint, coriander, saffron milk, kewra water, and 3 tbsp desi ghee across the top.

    Roll a snake of whole wheat dough around the rim of the handi. Press the lid tightly to form an airtight seal. Place handi on high heat for 8 minutes until steam builds up inside, then transfer handi onto a preheated heavy cast iron tawa on low heat. Cook on gentle dum for 30 minutes.

    Rest & Fluff with Flat Ladle
