Ingredients

- 1 tsp saltโ to taste
For the Crispy Besan Batter
- 150 g gram flour (besan)โ sifted
- 1 1/2 tbsp rice flourโ for extra crispness
- 0.3 tsp turmeric powder & chilli powderโ each
- 1 pinch baking sodaโ for light puff
- 1 tbsp hot oil (mohun)โ whisked into batter
- 120 ml waterโ for smooth coating consistency
For Assembly & Fiery Chutneys
- 6 buns fresh ladi pavโ slit in half
- 4 tbsp dry garlic coconut chutney (lasun chutney)โ the signature red chutney
- 4 tbsp spicy green chutney & sweet tamarind chutneyโ each
