    In a wide bowl, combine wheat flour, besan, chopped methi leaves, sesame seeds, ajwain, ginger-chilli paste, turmeric, dhana jeera, chilli powder, salt, yogurt, and 2 tbsp oil. Knead into a soft, smooth dough using minimal water. Rest for 10 minutes.

    Roll into Thin Disks

    Divide dough into small lemon-sized balls. Dust lightly with dry flour and roll each into a very thin, uniform 7-inch circle.
