Gujarati Methi Thepla
Thin, spiced, soft whole wheat flatbreads kneaded with fresh fenugreek leaves, yogurt, sesame seeds, and turmeric. The ultimate travel food with remarkable shelf life.
Ingredients
For the Thepla Dough
- 250 g whole wheat flour (gehun ka atta)โ fine
- 2 tbsp besan (gram flour)โ adds softness and nutty taste
- 100 g fresh fenugreek leaves (methi)โ washed, drained thoroughly, and very finely chopped
- 3 tbsp fresh curd (yogurt)โ makes dough soft for days
- 1 tbsp white sesame seeds (til)โ subtle crunch
- 1/2 tsp carom seeds (ajwain)โ crushed
- 1 tbsp ginger-green chilli pasteโ fine
- 1/2 tsp turmeric powderโ golden
- 1 tsp coriander-cumin powder (dhana jeera)โ ground
- 1/2 tsp Kashmiri red chilli powderโ mild warmth
- 2 tbsp cooking oilโ kneaded into dough plus extra for roasting
- 1 tsp saltโ to taste

Knead Spiced Methi Dough
โฑ๏ธ 8mIn a wide bowl, combine wheat flour, besan, chopped methi leaves, sesame seeds, ajwain, ginger-chilli paste, turmeric, dhana jeera, chilli powder, salt, yogurt, and 2 tbsp oil. Knead into a soft, smooth dough using minimal water. Rest for 10 minutes.

Roll into Thin Disks
โฑ๏ธ 6mDivide dough into small lemon-sized balls. Dust lightly with dry flour and roll each into a very thin, uniform 7-inch circle.

Roast on Hot Tawa
โฑ๏ธ 2mHeat a tawa on medium-high heat. Place rolled thepla on tawa. Cook for 30 seconds until tiny bubbles appear. Flip over.

Press with Oil to Keep Soft
โฑ๏ธ 2mDrizzle 1/2 tsp oil around edges and on top. Press gently with a flat spatula, cooking for 30-45 seconds per side until light golden specks appear. Do not overcook or thepla will become brittle.

- Chop the methi leaves very finely and dry thoroughly before kneading; wet leaves make the dough sticky.
