Crispy Masala Dosa
Paper-thin, golden-brown crispy fermented rice and lentil crepe stuffed with a spiced potato and onion bhaji, served with coconut chutney and piping hot sambar.
Ingredients
For the Fermented Dosa Batter
- 300 g idli / parboiled riceโ soaked 4 hours
- 100 g whole skinned urad dal (black gram)โ soaked with 1 tsp fenugreek seeds
- 30 g poha (flattened rice)โ soaked for 15 mins, gives golden crispness
- 1 tbsp chana dal (bengal gram)โ soaked with rice for golden color
- 1 tsp saltโ added before fermentation
For the Potato Masala (Aloo Palya)
- 400 g potatoesโ boiled, peeled, and coarsely mashed
- 1 tsp mustard seedsโ black
- 1 tsp urad dal & chana dalโ each, for crunchy tadka
- 12 leaves curry leavesโ fresh
- 3 whole green chilliesโ chopped
- 1 tbsp gingerโ finely grated
- 2 medium onionโ thinly sliced
- 1/2 tsp turmeric powderโ vibrant yellow
- 1 tbsp lemon juiceโ tangy finish
- 2 tbsp fresh corianderโ chopped
- 4 tbsp oil or gheeโ for cooking dosas

Grind and Ferment Batter
